Beet and Goat Cheese Salad

So classic it’s almost a cliche. ┬áBut in my eyes, it’s a classic for a reason.


Ingredients (for 2 servings)

4 cups of lettuce, torn

1/2 tbsp pecan halves (about 2.5), crumbled

1.5 tbsp goat cheese, crumbled

2 small, cooked beets, chopped

2 tbsp low fat dressing (I prefer a sweetish dressing with this dish, such as Poppy Seed, Honey-Mustard, Sweet & Sour, or Champagne Vinaigrette).



  1. Put the lettuce in a bowl or container.
  2. Toss in next three ingredients.
  3. Drizzle the dressing over the top when ready to serve, and toss well.

By my calculations, this works out to 1 PowerFuel (nuts and cheese), 1 Limited Extra (salad dressing) and 2+ servings of vegetables per serving.
