Rotini & Meatballs with Zucchini & Onions

My mother used to make a vegetable dish she called ‘Zucchini with Tomato Sauce’.  At the time, I hated raw zucchini, but somehow when it was cooked it absorbed the flavours around it and this dish was my preferred way to eat it!

That dish was my inspiration for tonight’s dinner, and even butter – it can be cooked in one pan and served in one bowl!


Ingredients (for 1 serving)

1 Nutrisystem® Rotini & Meatballs Dinner entrée

1 tsp cooking oil      (I prefer light-tasting olive oil)

1 cup chopped zucchini

1/2 cup chopped onion

1/2 cup chopped mushroom

1/3 cup plain tomato sauce

1/4 tsp Italian seasoning

1 pinch garlic powder

1 pinch hot pepper flakes (optional)

2 – 4 tbsp water


Method

Heat the oil in a non-stick frying pan over medium heat.

Add the vegetables, Italian seasoning, garlic powder, and pepper if using, and saute until softened.

Add the tomato sauce and continue to saute until warmed through.

Empty the entree, cold, into the frying pan.  Add water as necessary to soften and mix.

Bring to a simmer for 2 minutes, then serve.

 

By my calculations, this works out to one NS dinner entree, 2 servings of vegetables, and one extra per serving.
