Two Takes on Snack Mix

Here’s two versions of a snack mix for you – one sweet and chewy with dried fruit, the other crunchy and savoury!

The sweet version is based on a recipe for spiced nuts I used for an SCA event.  The idea for using egg whites instead of the usual butter came from Chef Michael Smith.  No guilt there – a single egg white is only about 17 calories, but I could have gotten at least another 2 batches out of this one.

Feel free to make multiple batches of either or both of these for a party – your guests don’t need to know that they’re low

 

 

Version 1 – Savoury Ranch Snack Mix (2 servings)

2 serving of unsweetened, non-flake cereal*

2 servings of nuts

2 tsp egg white

1.5 tbsp ranch dressing mix

  1. Preheat oven to 350F.
  2. Put cereal and nuts in a small bowl.
  3. Sprinkle egg white over cereal mixture.
  4. Add seasoning and toss well.
  5. Toast on a parchment covered baking sheet at 350F for 10 minutes, turning once mid-way through.

* I used about 2 cups of Corn Bran Squares.  I believe Chex ® is the traditional selection.

 

Version 2 – Spicy Sweet Fruit and Nut Snack Mix (3 servings)

1 serving of unsweetened, non-flake cereal

6 tbsp nuts

2 servings of dried fruit (about 1/2 cup, total)

1/2 tsp Splenda or Stevia

1 pinch each ground Cinnamon, Ginger and Cloves

2 tsp egg whites

Dried Apricots and Strawberries
  1. Preheat oven to 350F.
  2. Put cereal and nuts in a small bowl.
  3. Sprinkle egg white over cereal mixture.
  4. Add spices and sweetener and toss well.
  5. Toast on a parchment covered baking sheet at 350F for 10 minutes, turning once mid-way through.
  6. Combine with dried fruit.

If you’d prefer larger servings, use 2 servings of cereal and 1 serving of dried fruit. 

The savoury version is ‘husband-approved’.

The sweet version would have been, too, except that he doesn’t like dried fruit!

As usual, by my calculations, each serving works out to 1 SmartCarb and 1 PowerFuel
