Berry French Toast

DH mentioned the other day that I don’t seem to have too many lunch or breakfast ideas posted…

He’s going to be sore that he slept in this morning, because here’s this morning’s selection:

Ingredients (For 1 Serving)

1 NS Honey Wheat Bagel

1 egg

1/8 tsp vanilla extract

1/8 tsp cinnamon

1/2 tbsp maple syrup

1 cup frozen mixed berries



Cut the bagel in half.  Stab the top and bottom several times each with a fork.img_0202

Use the fork to lightly beat the egg along with the cinnamon and vanilla in a container just big enough for the two halves of the bagel.  Turn occasionally while you do the next two steps.img_0203

Put berries into a microwave-safe bowl.  Cut up any larger chunks – mainly the strawberries.img_0204

Microwave 30 seconds, stir, then microwave another 30 seconds.  Pour maple syrup over top.img_0205

Preheat a non-stick pan on medium heat.  (I used the ceramic one this morning, because it doesn’t need oil or cooking spray.)

Put the two bagel halves in the pan.  Pour any remaining egg mixture over top.  Cook about 2 minutes each side.  In the meantime, give the berries 30 seconds in the microwave, stir, and give them another 30 seconds.  They’ll be nice and warm

To serve, arrange the bagels on a plate, and top with the berry mixture.  (Be careful, it splatters!)


By my calculations, this one is one NS Breakfast Entree, one Extra, one PowerFuel and one SmartCarb. It makes a very filling breakfast.

If you want to be kind, increase the Maple Syrup to 1 tbsp, and serve 2.  I believe that would make one PowerFuel, one SmartCarb and one Extra each.

Feel free to experiment with different spices, extracts, and fruit – maybe ginger or cloves with orange extract and pineapple…
