Macaroni and Tuna Salad

Sometimes, you just need comfort food…

I was craving macaroni salad not that long ago, and after turning it over in my mind for a bit, I realized that it was possible without breaking the diet…

1 SmartCarb’s worth of macaroni -cooked and cooled

The Tuna Salad lunch entree says it should be eaten with a small roll.  I just replaced the roll with the a SmartCarb’s worth of elbow macaroni!  I dont’ like whole wheat pasta, but I’ve found a brand that has a higher fiber content in what looks like a regular pasta.

Ingredients – for 1 portion

1 package NutriSystem’s Tuna Salad luncheon entree

1 tbsp low fat Mayonnaise or Miracle Whip

1/2 tbsp prepared mustard

1 pinch thyme

1 tbsp sweet pickle, minced

1 tbsp grated carrot

1/4 cup tomato, chopped

1 green onion, chopped

1 tbsp bell pepper, chopped

small bit of lettuce, shredded

fresh ground pepper (and other seasonings, to taste)

Method

  1. Combine tuna, mayonnaise, mustard, thyme and pickle;
  2. If taking to work for lunch, package the tuna mixture and vegetables separately;
  3. To serve, make a bed of the lettuce.  Combine tuna mixture and remaining vegetables, then turn onto lettuce.

By my calculations, this is a NS lunch, a serving of Vegetables, and 1 Extra.
