My husband and I are especially fond of this one… It makes a great addition to our weekday lunchboxes, and is a great way to use up cherry tomatoes from the Aerogarden!
Ingredients (for 1 portion)
3.5 ozs cherry tomatoes (or grape tomatoes)
1 oz feta cheese, rinsed in cold water
1 tsp balsamic vinegar
1 tsp olive oil
1 pinch garlic salt
1 pinch fresh ground black pepper
1/2 tsp fresh oregano, chopped (or fresh basil)
- Halve cherry tomatoes and mix with crumbled feta cheese in a 2-cup container;
- Top with herbs;
- Combine next 5 ingredients in a 2 ounce mini Tupperware container;
- To serve, shake mini container well, and add to tomatoes and cheese.
By my calculations, this works out to 1 serving of vegetables, one PowerFuel and 1 Extra.
It’s pretty easy t scale this one up.
